The grapes for this Crémant come from vines planted on the Ingersheim plain. The soils are predominantly marl-limestone, made up of conglomerates of chalky pebbles coated with marl. They are derived from scree from the edges of the Rhine Graben when it collapsed during the Tertiary Era (-66 Ma to -2.58 Ma).
They are mainly yellowish oolitic limestones that the torrents have shaped into pebbles of varying sizes. These were deposited at the same time as calcareous clays (marls) or calcareous sands to form a more or less cemented rock, commonly known as ‘conglomerate’. Of variable composition, they are all rich in active limestone and the fertility of the soil depends on the clay, which binds the minerals and retains water.
All the grape varieties, especially the early-ripening ones, thrive on this terroir, which produces powerful, well-balanced wines with great longevity.
The vines are grown according to the principles of the Organic Farming and the Biodynamics.
The grapes are harvested by hand and then pressed in stainless steel vats, where the alcoholic fermentation begins spontaneously under the action of indigenous yeasts, followed by the malolactic fermentation carried out by indigenous bacteria. The must is then racked into the bottle before the addition of liqueur de tirage for the second fermentation. The liqueur de tirage is homemade from the juice of the last harvest, supplemented by a homemade sourdough.
The wine is then aged on laths for 12 months before being disgorged without any sugar addition.
When opening this Crémant, be sure to tilt the bottle and uncork it gently to avoid excessive foaming and loss of liquid.
