EVIDENCE is an orange wine, a skin maceration wine made from three white grape varieties all from the same Dorfburg vineyard.
EVIDENCE is made from the grapes of three varieties planted on the same plot of land known as Dorfburg, next to the Grand Cru Florimont.
Its marl-limestone terroir dates from the Lower Toarcian period (183 to 175 million years ago), a geological episode in the Lower Jurassic period when the region was covered by a deep, cold sea. It consists of a thick layer of dark grey shale (6 to 8m), with a few layers of fine, hard limestone.
The vines are grown according to the principles of the Organic Farming and the Biodynamics.
The grapes are harvested by hand, then destemmed before being placed all together in fibreglass vats for around ten days of maceration on the skins, during which the alcoholic fermentation starts spontaneously under the effect of indigenous yeasts.
EVIDENCE is a skin contact wine bottled without filtration. It may therefore show a slight cloudiness in the glass, and should not be exposed to heat but kept in a cool cellar.
