Powerful nose with a hint of reduction that opens up with aromas of blueberries, coffee, dark chocolate and a hint of black pepper. On the palate, the juice is structured and fruity.

Formerly known as Micro-climat, the Syrah Entrevon cuvée is the only single-plot and single-varietal wine (100% Syrah) of the estate. The quantities are extremely low and, for the 2017 vintage, only 1,242 bottles were produced.
TERROIR
The Syrah vines that gave birth to this cuvée are planted at a place called Entrevon and located, in the village of Malaucène, 350 meters high on the north slope of the Mont Ventoux. The soil dates from the Middle Miocene (-15 à -11 m.y) and consists of a yellowish sand and sandstone layer, called Sables de Valréas, whose thickness can reach up to more than 100 meters in places. These sands attest to the last marine transgression that took place in the region at the beginning of the Miocene before the definitive seas withdrawal at the end of the Miocene.
The north exposure of the plot makes it one of the estate coolest terroirs which gives this Syrah's wine a rather "northern" style.
WINEMAKING
The estate vineyard is cultivated according to the principles of the Organic Agriculture with Ecocert certification. The grapes are picked by hand, and the harvest is completely destemmed. The grapes macerate for 15 days in concrete tanks, then the must is aged for 18 months in oak barrels and in stainless steel tanks.
The wine is not fined but filtered before bottling.
Note that the bottle is closed by a DIAM® cork stopper, specially designed to guarantee the absence of any wine contamination by the stopper (the famous "corky taste"), by using the cork flower previously rid of the molecule responsible for this aromatic deviance.

For the tasting, we decanted it 2 hours before. As the wine is still young, we recommend waiting it until 2023. Before this date, we recommend opening it one day before the service.
