SOIL: blend of the three main terroirs of Chavignol dating back to the LATE JURASSIC period: the caillottes or "Buzançais limestone" composed of layers of bedded limestone arranged in thin flat stones, the silex (flint), and the terres blanches (white soils), the local name given to Kimmeridgian marls with "Exogyra Virgula" (small fossilised oysters).
HARVEST: manual, in 12 kg crates.
SORTING: by hand on a sorting table.
VINIFICATION: slow and gentle pressing of the grapes. Fermentation in temperature-controlled vats using indigenous yeasts.
AGEING: 6 months on fine lees in vats, including 10% in 228-liter oak barrels.
BOTTLING: racking in April after fining and light filtration.
CORK: DIAM5® technological cork, guaranteeing the absence of any TCA contamination or cork taint.
