OUR OPINION: a lovely, expressive, and gourmet Chavignol!
The soils of the Sancerre vineyards have been shaped by erosion from the different geological facies exposed by numerous faults, including the two famous north-south faults known as the Sancerre and Thauvenay faults, which cross the vineyards from one side to the other.
These bring the Upper Jurassic (-154 to -140 Ma) layers to the west into contact with the Cretaceous (-96 to -65 Ma) and Eocene (-64 to -34 Ma) formations to the east.
The grapes are cultivated according to the Organic Farming principles, even if the estate is not certified yet. It also began its conversion in 2020.
The harvest is manual and takes place in 12 kg boxes, which preserves the grape berries integrity and prevents their oxidation before they reach the cellar. The grapes are then gently pressed with a Coquard hydraulic press.
Alcoholic fermentation takes place in thermo-regulated stainless steel vats and starts spontaneously under the indigenous yeasts action, it is then followed by the malolactic fermentation.
The must is aged on its fine lees in stainless steel tanks and 228-liter oak barrels (10%) for around 6 months. Then, in April, it is racked, fined and lightly filtered before bottling.
The bottle is sealed with a DIAM5® cork stopper which guarantees the absence of TCA contamination of the wine (or cork taste)
