OUR OPINION: the wine was a little closed on tasting, but more open the next day. You'll have to wait and see, as it seems to have a great ageing potential. In the meantime, don't hesitate to decant it for an hour.

The soils of the Sancerre vineyards have been shaped by erosion from the different geological facies exposed by numerous faults, including the two famous north-south faults known as the Sancerre and Thauvenay faults, which cross the vineyards from one side to the other.
These bring the Upper Jurassic (-154 to -140 Ma) layers to the west into contact with the Cretaceous (-96 to -65 Ma) and Eocene (-64 to -34 Ma) formations to the east.
The 40-year-old vines of the Silex cuvée are planted on flint soil formed in the Hauterivian (122 million years ago) and Cenomanian (96 million years ago) periods, as well as in the Eocene (-64 to -34 Ma), when the continent gradually emerged from the seas.
This terroir produces nervous wines with flinty aromas that are very pleasant when young.
The grapes are cultivated in accordance with the Organic Farming specifications, even if the estate is not Ecocert certified, which is not that far away since the latter has begun its conversion in 2020.
The grapes are harvested manually and sorted on site in order to harvest only those which have reached full maturity.
They are then pressed in whole bunches, not crushed, in a hydraulic press of the Coquard type, ensuring a slow and weak pressing guaranteeing a juice of high quality.
The must is placed in 2000-liter casks for the fermentation with native yeasts and for the ageing phase for 8 to 12 months.
The must is lightly filtered before bottling.
The bottle is sealed with a DIAM5® cork stopper which guarantees the absence of TCA contamination of the wine (or cork taste)
