OUR OPINION: a lot of freshness and energy in this Melon de Bourgogne, which expresses itself delicately in the glass! A totally different expression from the classic Melon in the Muscadet designation, the ageing in terracotta jars suits it perfectly!

DESCRIPTION


Radical change of style, the traditional grape variety of muscadet, the Melon de Bourgogne, is aged here in terracotta jars ! This amphora wine reveals a totally new expression of this grape, what will delight the palate of all eclectic wine lovers !

CARPE DIEM is aptly named. It is the Epicure thought's reflection, inviting us to pick the day as it comes and to appreciate the simple pleasures that Nature is giving us.

The use of the amphora, a more neutral container than the barrel, allows the juice to keep its youth and preserves the fruit's purity. The wine is also vinified without added sulphites, as it is often the case for amphora wines.

TERROIR


The grapes come from vines planted on a poor soil of granite, a magmatic rock crystallized by slow cooling of magma in the Earth's mantle millions of years ago : it is an acid rock, rich in silica, and poor in trace elements. This vine's favorite soil gives rise to generally more complex wines and must be kept in cellar to rest a few years in bottle.



WINEGROWING & WINEMAKING


The vines are grown according the biodynamics principles : no chemical treatments are used, and no fertilizer.

The grapes are manually harvested and gently pressed by pneumatic pressing. The must ferments in vats with the native yeasts, then it is racked into clay amphorae for an ageing period of 15 months where the must finishes its malolactic fermentation.

When the ageing phase is over, the must is racked without fining nor filtration before bottling. The wine matures one extra-year in bottle in the estate cellars before marketing.

No sulphites are added during the vinification process.

CARPE DIEM is a white wine made without any sulphites addition. It should not be exposed to heat but kept in a cool cellar.
