A new grape variety enriches the range of wines proposed in the Loire Valley's country : the Chardonnay vine. Known for its ability to adapt to very different soils and climates that make it an "international" grape variety, it has never planted its roots in the Nantes soils nor enjoyed a relatively temperate climate.
Everything suggests that the new Loire Valley's terroir suits the chardonnay, a terroir consisting exclusively of ORTHOGNEISS, a hard rock resulting from the Granite metamorphism (recrystallization and deformation under the effect of temperature and pressure). Although its structure and composition are close to the Granite's one, ORTHOGNEISS is less siliceous and a little richer in trace elements.
But there is another original point : a ageing in clay amphora and a vinification without added sulphites, generally very well tolerated with terracotta jars.
The harvest is manual and the grapes are gently pressed by pneumatic pressing. The must is not decanted but directly fermented with the native yeasts. It is then racked in clay amphorae for an ageing phase of 9 months, where the must finishes its malolactic fermentation.
When the ageing phase is over, the must is racked without any fining or filtration processes before bottling.
No sulphits are added during the whole process of vinification.
LUX is a white wine made without any sulphites addition. It should not be exposed to heat but kept in a cool cellar.
