Frais, cristallin, avec des notes anisées, ce vin est le compagnon parfait de tous les poissons de roches cuits au four et accompagnés des herbes du Sud de la France, comme un bar au fenouil, un pavé de saumon à l’aneth, ou une terrine de truite à l’estragon. Subtil et peu acide, il marie aussi voluptueusement ses fragrances avec celles d’une friture de petits rougets ou de rougets aux herbe et à l’huile d’olive.
