TERROIR


The cuvée La Perrière 2018 is a Chardonnay plot wine made from young vines (around 35 years old) and located in the place La Perrière in Viré.



TERROIR

At La Perrière place, the soil consists of about fifteen meters thick oolithic limestones formed in the Oxfordian period, more precisely in the Upper Rauracian, around 155 million years ago, when Europe was covered by a warm and shallow sea. The presence of ooliths, small spherical geological concretions, testify to a rough sea. These Rauracien calcareous soils generally give birth to saline wines.



WINEGROWING & WINEMAKING


The place La Perrière is a sunny plateau swept by gentle winds which allow the grapes to have good ventilation and reach an optimal maturity. Cultivated according to the principles of Organic Agriculture (ECOCERT certification) since 2003, they did not receive any chemical treatment.

They are manually harvested and sorted, then fermented in enamelled vats and in oak barrels, 10% of the must is fermented apart in new barrels. Only indigenous yeasts are used for winemaking. The must is aged for 14 months : 10 months in oak barrels and 4 months in tanks.

Food wine Pairing

Fruitée et minérale à la fois, la cuvée La Perrière est une séduisante mise en bouche pour commencer un repas. On peut la servir sur des radis noirs croquants, un filet de thon germon au citron, une terrine de poisson, ou des crevettes sautées à l’ail et au poivre. Elle fera également un beau duo sur des coquilles Saint-Jacques poêlées ou un poisson de roche grillé.
