- Nose: delicious and delicately spicy. Notes of black pepper, red and black fruit, with a hint of cinnamon and blackcurrant bud.

OUR OPINION: 2021 is a fruity, delicious vintage. Less full-bodied than previous vintages, it offers a lovely freshness and a pleasantly fragrant finish.

LABAYA is the new name of the former cuvée LAYA. It is one of Yves Cuilleron's trade wines since the estate does not have any vines in the Crozes-Hermitage designation. The purchased grapes come from a 2 ha plot located on the La Malfondière locality, near Tain l'Hermitage.
The plot La Malfondière straddles two soils of alluvial type :
a deep soil of pebbles and sand called La terrasse des Chassis, the oldest würmian terrace formed in the Quaternary, about 1 000 years ago, during the alpine glaciers extension and withdrawal.
a deep and older soil of gravel and sand called La terrasse des Odouards dating from the recent Riss period (Quaternary) formed about 2 000 years ago during the glaciers extension.
The grapes are manually harvested, crushed and partially destemmed. The alcoholic fermentation with native yeasts takes place in open vats, with temperature control and some punchings in order to extract a maximum of aromatic components. The malolactic fermentation takes place in barrels where the wine is aged for 18 months.
LAYA is a fruity wine ready to drink, of great complexity and freshness.

When bottling, the wines are corked with a DIAM10® cork stopper ensuring the absence of TCA contamination (or cork taste).
