The MARSANNAY CHARDONNAY ROSE cuvée is made from the variety Chardonnay rose coming mainly from the En Blungey plot and completed by a few other plots. The vines that compose this wine were planted in 1949, 2009 and 2013/14.

The Chardonnay rose is an old variety of Chardonnay whose berries are entirely pink; it was born from a mutation of the Burgundy white Chardonnay, but its taste flavors are different from those of the white Chardonnay.
It is also cultivated in the Jura.

TERROIR

The terroir of the En Blungey plot constitutes the majority of the MARSANNAY CHARDONNAY ROSE wine: it is composed of an oolitic limestone soil dating from the Bajocian (-171 to -167 Ma). Thiswhite-colored limestone formation has a carbonate rate close to 100%, and comes from an accumulation of small millimeter spheres called oolites and which correspond to quartz debris or shell fragments rolled by the waves.
These oolites were formed in a more or less agitated, hot and relatively shallow marine environment (0 to 15-20 meters high max).

WINEGROWING & WINEMAKING

The estate lost its Organic Culture certification in 2016 when the frost and the hail devastated the Burgundy vineyards, forcing the winemakers to use phytosanitary products to save the rest of the harvest. This is the reason why the 2018 vintage does not carry the Bio label, the latter will reappear on the bottles in 2020.

Once harvested, the grapes are rigorously sorted and then pressed using a vertical press for 5 to 7 hours. The must is left to rest to settle and then it is transferred to old barrels to carry out its alcoholic and malolactic fermentations. No yeasting is done, only the native yeasts are involved. The must then matures for 18 months in oak barrels,.

At the end of the aging phase, the must is drawn off without fining and then slightly filtered only if this operation is necessary. It is then bottled with a slight addition of SO2 to stabilize the wine.
