The Clos de Vougeot is one of the greatest Burgundy wines, founded in 1110 by the Cistercian monks. The latter studied the microclimate, the vine's growth conditions, the different varieties of pinot that existed and the different soil profils of the Clos. The typicity of the Clos de Vougeot is based on to the fact that all its qualities are expressed at an extraordinary level. This explains the still privileged status of this vineyard, nine hundred years after its creation.

Food wine Pairing

Tout comme pour le Clos des Langres rouge, on offrira à ce vin aux arômes de fruits rouges une côte de bœuf grillée ou un canard rôti bien croustillant. On évitera les aliments braisés ou en sauce dont la richesse de structure pourrait créer une rupture avec la fraîcheur et la finesse du vin. Malgré ses arômes de fruits, ce grand seigneur supporte mal les cerises, les épices, les agrumes, ou les légumes verts, que les notes végétales ont tendance à agresser. Pommes de terre, navets du printemps, oignons ou échalotes lui conviennent très bien, a contrario.

En vieillissant, il offre des bouquets plus compotés et chaud, et un goût une peu plus animal. C’est alors qu’il s’exprime pleinement sur un gibier à plume – faisans, perdreaux, bécasses.
