New product
- Nose: intense and spicy, slightly balsamic. Notes of black pepper, blackberry, blueberry and menthol.
- Palate: finely structured with supple tannins. Nice freshness, tasty finish.
Tasting date: November 2022.
OUR OPINION: this volnay needs to be get some fresh air before tasting. Then It reveals powerful mentholated and spicy aromas that make it atypical. I would recommend this very fine cuvée to lovers of "dark" and rich wines.
Other available vintage:
The Volnay designation is located on either side of the band of the Premiers Crus which crosses the vineyard in its center. Volnay is located in the lower part of the hillside.
The vineyard lies on deeper soils, rich in clay, where excellent calcareous colluviums from the mountain are mixed.
The grapes are harvested manually and only the most beautiful and ripe bunches are kept. They are then vatted for a maceration of 12 to 15 days with temperature control.
One or two punching-down operations are carried out each day to break the marc cap which forms at the tank's top.
Once the alcoholic and malolactic fermentations are finished, the must is racked into vats for a few days rest before being aged for 18 months in 228-litre barrels; a quarter of them are new.
When the ageing phase is over, the must is drawn off and then bottled without fining but after just a light filtration.
