OUR OPINION: 2022 is a deeper and denser vintage than 2021, which displays exuberance and small red fruits. It will be perfect with stewed or candied meat dishes. It should be decanted for half an hour while young.

The CHOREY-LES-BEAUNES vineyard is an exception in the winegrowing landscape of the Côte because it is the furthest away from the foot's hill. It owes its existence to the wide Rhoin valley which brought excellent clay-limestone colluvium into the piedmont, favorable to a winegrowing of high quality.
The soils are thus made up of calcareous marl colluvium, the calcareous marl dating from the Upper Jurassic, a time when the sea gradually withdraws from the region, between -160 and -154 million years ago.
Naturally well-drained, these soils offer the vines a privileged position which prevents them from blocking their maturity during the hot years, as it can sometimes be the case on the slopes.
The grapes are harvested manually and only the most beautiful and ripe bunches are kept. They are then vatted for a maceration of 12 to 15 days with temperature control.
One or two punching-down operations are carried out each day to break the marc cap which forms at the tank's top.
Once the alcoholic and malolactic fermentations are finished, the must is drawn off into vats for a few days rest before starting an 18-month ageing in 228-liter barrels, a quarter of them are new.
When the ageing phase is over, the must is drawn off and then bottled without fining but after a light filtration.
