LOCATION: 300 metres above sea level, on the plateau overlooking the village of Talairan, in the heart of the garrigue and in a preserved natural environment where many wild orchids grow.
SOIL: alternating conglomerates, sandstone, and fluvial sandstone marls locally known as Carcassonne molasses. Their sedimentation occurred during the Cuisian - Lutetian and Bartonian, three geological stages belonging to the EARLY AND LATE EOCENE epoch.
HARVEST: manual / hand-picked.

VINIFICATION: destemming followed by crushing in vats. Maceration and fermentations lasting 6 to 7 days.
