GEOLOGY : One of Europe’s oldest terroirs, dating back to the Paleozoic era; the PUIG ORIOL plot originates from the CAMBRIAN period. It features Canaveilles schists (more or less metamorphic), feldspathic sandstone, and black schists (Cabrils formation). With bedrock outcropping at the surface, vines must take deep root to access essential water during summer. Organized in terraces, the vineyard requires exclusively manual labor.
HARVEST: Manual, between late August and mid-September (starting with Grenache, followed by Syrah and Carignan).
YIELD: 35 hl/ha.
SORTING: In the vineyard and at the winery.
WINEMAKING: Full destemming, long maceration in stainless steel vats for 5 weeks with pump-overs and punch-downs. Both alcoholic and malolactic fermentations completed.
AGING: 15 months in stainless steel and concrete vats.
BOTTLING: After light filtration. No fining.
CLOSURE: Natural cork.
