DESCRIPTION


CHABLIS LES CHAMPREAUX is a single plot cuvée made from 27-year-old vines planted on the locality Les Champréaux whose surface is just under 3 ha.



TERROIR

The parcel of the locality Les Champréaux, oriented East-South East, is located on the Fontenay-près-Chablis hillside ; the latter is particularly appreciated by Guillaume Vrignaud because those vines are naturally not very vigorous and they always offer grapes of an irreproachable sanitary quality.
The soil dates from the Portlandian (Upper Jurassic), a geological layer about 142 million years old, characterized by limestones, called "calcaires du Barrois", which formed in a shallow marine environment.
Located at an altitude of about 150 to 230 meters, these very hard limestones are separated by thick marl banks of about fifty meters which makes them suitable for growing vines.



WINEGROWING & WINEMAKING


The vines are grown in accordance with the Organic Agriculture specifications and the winemaking is done with as little input as possible.

Once the grapes are harvested, they are gently pressed, then the juice is vatted in thermo-regulated stainless steel tanks where the alcoholic fermentation starts spontaneously under the indigenous yeasts action.
Once the alcoholic fermentation is completed, the must is racked into oak barrels for a fine lees ageing phase of 10 months during which the malolactic fermentation is carried out by the indigenous bacteria.
Once the maturation is complete, the wine is racked, lightly filtered and then bottled.

The bottle is closed by a cork of the DIAM®'s brand, specially designed to guarantee zero wine's contamination by the cork, called "cork taste", thanks to the use of the cork flower previously cleared from the molecule responsible for this aromatic deviance.
