There is some changes between 2012 (certainly due to the Stéphane Guillot's arrival, oenologist and director of exploitation of the Château) and the previous vintage of the red Château Thénac. If Merlot remains the main grape variety, and the Malbec percentage stays pretty the same, the Cabernet Sauvignon's one is on the other hand more consequent, and one will note the total absence of Cabernet Franc for 2012.

The ageing no longer lasts 15 months, as it was the case for the previous vintages, but only 12 months and it only takes place in barrels. The woody smell is very well integrated, and the wine has fruity notes and offers a nice freshness, certainly because of the rainy spring, followed by a hot and dry summer, that both favored the berries concentration which size remained relatively small.

A great success for this wine with a profile close to Bordeaux wines, that need to be decanted for at least an hour to soften the tannins.

Légèrement structuré dans sa jeunesse, ce vin est idéal pour accompagner de belles entrecôtes grillées ou des tranches de jambon de truie épaisses et consommées à température moyenne, lorsque le gras est suintant. L'agneau , lorsqu'il est grillé au four avec ses pommes de terre et ses herbes aromatiques, lui convient à merveille.

En vieillissant, les tanins ne seront plus perceptibles, et le bouquet du vin évoluera vers des notes de fruits mûrs et de sous-bois: il s'exprimera alors avec élégance sur un salmis de palombe ou un civet de lièvre.
