Merlot is the majority grape of this cuvée (80%), added by a little of Cabernet Franc (20%). The vines are located on the parcels Moulin, Caillou, and Clos de l'Eglise, where they were planted on 6 hectares in 1933, 1946, 1959,1964, and until 1998. The yields are of 30hl / ha. The grains are not crushed, they macerate for a long time then are aged in oak barrels for a period of 18 months. The presence of some few new barrels (5%) during the ageing allows to wrap the cuvée with some well-integrated oak notes.

Food wine Pairing

Les vins de la région de Saint-Emilion sont des vins essentiellement ronds, une caractéristique que l’on doit à la présence majoritaire du merlot. Les accords doivent donc être orientés sur la rondeur. « Château Beauséjour » fera merveille avec un cassoulet, par exemple, où le bouquet boisé du vin enrobe bien les haricots du plat. Il accompagnera également à la perfection les confits de canard ou les entrecôtes grillées.
