LANGUEDOC - AOP CORBIÈRES - RED WINE
Grape varieties: Carignan (35%) - Syrah (35%) - Grenache noir (30%)

Ageing for 8 months in oak barrels

Garrigue - Full-bodied

  • Nose: delicate. Notes of laurel, thyme and black fruit.

  • Palate: fleshy, still tightly structured<./li>
  • Tasting date: May 2025.

  • OUR OPINION: a vintage in which aromas of garrigue dominate the fruit. It is also a little more tannic than its predecessors, so let it mature 1 or 2 extra years in the cellar (2027) or decant 1 hour before drinking.

Other vintage available:

2020

TERROIR

The vines of the SERRES-MAZARD estate are planted at an altitude of 300 metres, on the plateau overlooking the village of Talairan, in the heart of the garrigue and in a preserved area where numerous wild orchids grow.

The soil is composed of alternating conglomerates, sandstone and fluvial sandstone marls, known locally as the 'molasses de Carcassonne'. Their sedimentation took place during the Cuisian, Lutetian and Bartonian periods, three geological stages belonging to the Lower and Upper Eocene (55 to 37 million years ago).

The region was then covered by the sea. In the Cuisian, the latter retreated, moving on to a lacustrine and palustrine sedimentation, then from the Lutetian to the Bartonian, to a powerful continental sedimentation which gave rise to the molasses de Carcassonne.

WINEGROWING & WINEMAKING

The cuvée RED ORIGINE is a blend of equal parts of Carignan and Syrah, with an addition of a little of Grenache noir. The vines yield is 40 hl/ha.
Each grape variety is made separately before blending.

The vines are cultivated according to the sustainable agriculture rules: no systematic treatments, only as a last resort, when necessary. The estate has been certified HVE level 3 since 2019.

The grapes that make the cuvée ORIGINE ROUGE are harvested by hand, de-stemmed but the grapes are not crushed. They are left to macerate as whole grapes for 15 days. When the alcoholic fermentation is finished, the must is pressed and put into oak barrels for an 8-month ageing phase during which it completes its malolactic fermentation.
The must is then racked and bottled.
