LOCATION: perched at an altitude of 300 metres on the heights of Talairan, in an untouched Mediterranean landscape where wild flora flourishes alongside the vines.
SOIL: a complex geological mosaic locally referred to as Carcassonne molasses, featuring a blend of sandstone, conglomerates, and fluvial marls. These formations date back to the Cuisian, Lutetian, and Bartonian stages of the EARLY AND LATE EOCENE epoch.
HARVEST: hand-picked at optimal maturity.
YIELD: controlled yield of 35 hl/ha.
VINIFICATION: parcel-by-parcel vinification for each grape variety. The harvest is fully destemmed without crushing, allowing whole grapes to macerate gently for a period of 15 days. Complete alcoholic and malolactic fermentations.
AGEING: 12 months in oak barrels.
BOTTLING: lightly filtered prior to bottling.
CORK: traditional natural cork.
