TERROIR

The vines that make up the VIOGNIER vintage are located in the commune of Vacqueyras, on the banks of the Ouvèze river.
The soil is composed of recent fluvial alluvium deposited by the river, rich in marl, clay, silt and gravel.

WINEGROWING & WINEMAKING

The Viognier vines are cultivated according to the Sustainable Farming principles and the rows are grassed. Their yield is 70 to 100 hl/ha.

The grapes are harvested manually and destemmed then pressed by direct pressing. After a short period of rest to settle the must, it is racked into stainless steel tanks for its fermentations, which are done cold, without yeast addition.
It is then aged for 5 months on its fine lees. Regular stirring of the lees allows to put them back in suspension in the must and to bring more roundness to the wine.

The must is then lightly filtered and bottled.
