The GEWÜRZTRAMINER VIEILLES VIGNES cuvée comes from 30-year-old vines planted on the Grand-Cru Osterberg plots ; they are south-east oriented and their altitude varies between 240 and 343 meters.
Le Grand-Cru Orsterberg is of marl-limestone-sandstone type and dates from the Lower and Middle Muschelkalk, a Triassic stage which covers the period from -238 to -233 My. Composed of fossiliferous sandstone, dolomitic marls, and sandstone marl with gypsum, these soils bear witness to a marine to brackish sedimentary environment ; the sea having invaded the region during this period, it will remain there for more than 100 million years. The presence of clay, magnesia carbonates (dolomite), calcium, iron oxide and manganese make the richness of this terroir and the happiness of the demanding grape varieties such as the Gewürztraminer. The wines are generous, fine with an admirable cellar potential.
The vines are cultivated in accordance with the Organic viticulture specifications, and the estate will be certified 'Organic Agriculture' in 2021.
The grapes are manually harvested, then pressed once they reach the cellar : the pressing is slow, it lasts about 8 hours. The juice is then left for a static settling phase which lasts around 24 hours : the heaviest lees fall naturally to the tank.
The must is then drawn into a tun and the fermentations take place under temperature control for about 6 weeks. Then, it matures on the fine lees in tuns for 8 months.
Sterile filtration is carried out before bottling which takes place in May.
