GRANITE is a wine made from melon grapes produced by vines in their fifties. The cuvée's name comes from the plot's terroir : a soil formed over 400 million years ago and composed of granite with two micas (white and black mica) which appears among the Landreau gneisses. This acid rock, coming from a magma cooling phenomena, is particularly rich in silica, and gives birth to muscadet wines of high cellar potential.
GRANITE is therefore a wine to be kept in the cellar so that it can gently develop its tertiary aromas.
Yields are deliberately limited to 35 hl/ha, the grapes are harvested manually, and the entire harvest is gently pressed by pneumatic pressing. No settling is made, the must ferments with indigenous yeasts, then it is aged on lees for a few months in underground vats.
The statement "Elevé sur lies" is not labeled on the bottle because this mention requires a bottling date between 1 March and 30 November of the year following the harvest's one, a constraint that the domain does not want to follow.
