TERROIR


CHARIVARI is a sparkling wine made from two red grape varieties, Gamay and Grolleau, whose grapes are purchased from Julien MOREAU at the Domaine de Cambalu in Francueil.

Anne-Cécile JADAUD makes sure that she harvests the grapes from the same two plots every year to preserve the aromatic profile of her sparkling rosé.

The terroir of the Domaine de Cambalu plots dates from the Upper Cretaceous period: the Gamay vines are planted on north-south facing plots with sandy-loam soil, while the Grolleau vines are planted on east-west facing plots with sandy soil.

WINEGROWING & WINEMAKING


The vines on the Cambalu estate are grown according to the Organic Farming principles, but in the absence of Ecocert certification, we cannot classify CHARIVARI as an organic wine. The vines are around twenty years old and yields are around 35 hl/ha.

Anne-Cécile JADAUD personally checks the ripeness of the grapes and harvests them by hand.

The grapes are co-fermented in fibre tanks and the alcoholic fermentation is done by the native yeasts. The must is then racked and bottled directly for a slats ageing of 7 months.

Once the slats ageing phase is complete, the wine is disgorged without any addition of sugar ('liqueur de dosage').

  • Total SO2 : 20 mg/l
