It is the little jewel of the MACLE estate. At Château-Chalon, in the estate long underground galleries, the 60-year-old casks rest in silence, aligned on three floors. Those 228 liters barrels that have only received the must of chardonnay or savagnin are not cleaned, they are just returned and emptied by the bung. No way to replace thems : they are the nest of a indigenous yeasts population essential to the good catch of veil allowing the wine oxidative ageing.
This Côtes du Jura has a cellar potential of about forty years, it is made from a blend of 80% Chardonnay and 20% Savagnin.
The vines are based on 180-million-year-old Jurassic soils composed of blue marl and limestone with flint or red limestone. The Chardonnay finds in these marly soils a favourite terroir where it expresses itself in a completely atypical way.
The grapes are cultivated according to the principles of Organic Farming, and the estate is being converted to the AB certification.
After having carried out its alcoholic and malolactic fermentations, the must is aged under veil in the old barrels of 228 liters for three years, without any ullage/topping ("ouillage" in french).
As time goes by, this wine will offer a nose of honey, candied fruits, hazelnuts and sweet spices. A beautiful Côte du Jura.
