The Cornas Lieu-dit Les Côtes cuvée is a single plot and single varietal Syrah wine. The vines used for its production were planted in 1911 on a plot located in a majestic amphitheater in Cornas, these vines are therefore more than a century old.

TERROIR

The place called Les Côtes is made up of a granite base over 600 million years old. Its formation was made during a continental collision resulting in the subduction of the ocean floor under the largest continent of the time : the Gondwana.

During the collision, the sedimentary rocks made of sandstone and shales are compressed and heated under the effect of a local metamorphism of medium pressure. The fusion of this sedimentary rock induced by the increase in pressure and temperature transforms it, after crystallization, into a very hard granite rock with biotite.

The tectonic movements which took place during the millions years of our planet's life cracked it, allowing the runoff water to infiltrate there, to freeze during the winter periods by bursting the rock.
It is in its multiple crevices that the vine can find all the resources necessary for its survival : water and nutrients.

WINEGROWING & WINEMAKING

The grapes are grown according to the principles of the sustainable agriculture with the willing to protect the local ecosystem as much as possible. They are harvested manually, partially destemmed and then crushed.

The juice maceration with the skins lasts three weeks during which the alcoholic fermentation takes place in the presence of the native yeasts. At the end of this three weeks of maceration, the must is racked in oak barrels for an 18 months ageing phase during which the malolactic fermentation takes place.

The wine is then fined and bottled.
