  • Palate:invigorating. Richly perfumed and salivating. Slightly saline finish.

Tasting date: April 2024.

OUR OPINION: a very fine and atypical expression of the Melon de Bourgogne. The ageing container must influence its aromatic profile, giving it richness and depth. I like it very much!

TERROIR


TAURUS is a wine from the Muscadet Sèvre et Maine designation whose particularity lies in its ageing method combining oak barrels and vats. The grapes come from vines that are around fifty years old and from a blend of plots with the following geological soils :

  • a granite soil, a rock of magmatic origin crystallized by a slow magma cooling that happened million years ago in the earth's mantle. It is a an acidic rock, rich in silica and poor in trace elements.

    Its proportion is 60% in the blend.

  • a soil of Orthogneiss, a metamorphic rock transformed at its solid state from the Granite when the plate tectonics movements caused a temperature and pressure increase. The latter is less rich in silica than the original rock, richer in trace elements and harder.

    Its proportion is 40% in the blend.



WINEGROWING & WINEMAKING


TAURUS is a Muscadet Sèvre and Maine wine whose particularity lies in its ageing method combining oak barrels and vats. The grapes come from about fifty years old vines, they are harvested by hand and gently pressed by pneumatic pressing. The must is not decanted but directly fermented with the native yeasts.

The wine is aged on its fine lees for 24 months. 50% of the must is aged in 500-liter Austrian barrels (stockringer) and the other half in clay amphorae.


After racking, the wine is blended in vats, where it remains for two months before being bottled without fining or filtration.

No doubt, TAURUS is a muscadet of character, with a unique expression that we greatly appreciate!
