Fragrant nose with notes of white flowers and peach flowers, yellow peaches, ripe apricots, lychees and mangoes. Nice attack on the palate, the juice is dynamic, ample and nicely perfumed with a slightly aniseed finish.

Very beautiful Roussanne wine.

DIGUE is a white wine made from Roussanne grapes coming from a single plot located on the place called Digue, in the town of Saint-Pierre de Boeuf. The vines grow on a soil of dark cordierite anatexites, a granite made from the molten continental crust about 297 million years ago. The cordierite's presence indicates a magma rich in aluminum and a metamorphism of low pressure and high temperature. This acidic rock, intrinsically of low porosity and permeability, becomes aquiferous when it is altered and fractured. The vine can consequently find the precious water it needs therein.

Its southern exposure on sloping hillside allows an optimal grapes maturity which are manually harvested with successive sorting according to the different maturity degrees.

Alcoholic and malolactic fermentations take place in barrels with native micro-organisms. The must continues its ageing also in barrels and with the lees which regular stirring suspends in the must.

This wine can be drunk young, it will present the primary flower and fruit aromas until 3 or 4 years after bottling, but it has a ten years cellar potential where it will develop beautiful tertiary aromas.

In his youth, we recommend decanting it an hour before serving.

DIGUE est un vin généreux et ample, sa présence sera remarquée sur une brandade de morue ou des coquilles Saint-Jacques à la provençale. On le servira également sur des ravioles de homard sauce au safran ou des crustacés. Il accompagne aussi avec brio les viandes blanches grillées et épicées.
