VINE AGE: 56-year-old vines.

LOCATION: Premier Cru plot Côtes de Fontenay.

EXPOSURE: Southeast-facing slopes.

SOILS: soil dating from the PORTLANDIAN (Upper Jurassic) characterized by limestone known as "Barrois limestone".

Viticulture & Winemaking

HARVEST: Sept. 5, 2022.

YIELDS: N/A.

SORTING: carried out in the cellar.

WINEMAKING: Gentle pressing. Alcoholic fermentation with selected 'Bourgoblanc' yeasts. Malolactic fermentation takes place with indigenous bacteria.

AGING: on lees in stainless steel tanks for 10 months.

BOTTLING: March 11, 2024, after light filtration.

CORK: DIAM5®, specially designed to guarantee the absence of any contamination of the wine by the cork (known as "cork taint"), thanks to the use of the finest part of the cork previously cleared of the molecule responsible for this aromatic defect.
