DESCRIPTION


>The CHABLIS 1er CRU MONT DE MILIEU is a wine made from forty years old Chardonnay vines planted on a 27-acre plot located in the Mont de Milieu locality. This parcel is cultivated by a neighbouring winegrower who sells the grapes to Guillaume VRIGNAUD.
The very small surface area of the latter only allows for a very confidential production of this cuvée.



TERROIR

The climat MONT DE MILIEU 1er Cru owes its name to the fact that here were formerly in its middle a border between the Champagne's County and the Burgundy's Duchy.
It is located to the south of the Chablis Grand Crus. The vines are planted on hillsides with exposures varying from south-west to south-east, and whose soils date from the Middle and Upper Kimmeridgian, a geological layer about 150 million years old, characterised by limestone and marl about 80 metres thick, whose sedimentation took place in warm and turbulent water. This soil is composed of alternating limestone banks rich in small fossilised oysters, the Exogyra virgula, and grey marl. It is the preferred area for the great wines of Chablis.



WINEGROWING & WINEMAKING


The grapes are harvested by hand and then transported to the VRIGNAUD estate where the must is vinified.
The alcoholic and malolactic fermentations are carried out in stainless steel vats in the presence of indigenous yeasts and bacteria. The must is then matured on its lees in 20 hl stainless steel vats for 12 months.

The bottle is sealed with a DIAM5® cork, specially designed to guarantee the absence of any wine contamination by the cork, known as the "cork taste", thanks to the use of the cork flower, which has previously been cleaned of the molecule responsible for this aromatic deviation.
