Terroir

PLANTING DATE: 2001 (Serine from Côte Rôtie massal selection) and 1998 (Cabernet Sauvignon).

LOCATION: Bas Heyrauds in Ménerbes.

EXPOSURE: N/A

SOILS: The Ad Fines vineyard is characterized by a perfect geology of sandy-clay soil on a limestone base: the sand (70%) brings finesse and elegance to the wines, while the clay and silt (30%) provide structure and volume. Serine and Cabernet Sauvignon share the stoniest plots.

Viticulture & Winemaking

HARVEST: hand-picked, on Sept. 16, 2022 (Serine) and Oct. 4, 2022 (Cabernet Sauvignon)

YIELDS: 20 to 30 hl/ha.

SORTING: carried out in the cellar with rare severity; no defective berries remain.

WINEMAKING: Cabernet Sauvignon is 100% destemmed, Serine 70%. The berries macerate in tanks for 31 days (Serine) and 23 days (Cabernet Sauvignon). Alcoholic fermentation is carried out with indigenous yeasts. Extraction is promoted by pump-overs, rack and return, and punch-downs.

AGING: 12 months in Burgundy barrels (2 to 3 wines old).

BOTTLING: N/A.

CORK: natural cork.

"Once again, Ad Fines has crafted a truly beautiful cuvée. The exceptional drought of 2022 enhanced the Serine, which is largely dominant in the blend: it offers us a rich and generous wine, where notes of black fruits, chocolate, and roasted coffee mingle with the variety's spicy flavors. The small touch of Cabernet Sauvignon brings beautiful volume on the palate with silky tannins and a long finish. Superb!"
