SOIL: blend of the three main terroirs of Chavignol dating back to the LATE JURASSIC period:
HARVEST: manual, in 12 kg crates.
SORTING: by hand on a sorting table.
VINIFICATION: the grapes are fully destemmed. The berries macerate for 25 days in vats with pump-overs (remontages). Fermentations are carried out using indigenous yeasts. The must is then pressed and transferred to barrels for ageing.
