TERROIR


The soils of the Sancerre vineyards have been shaped by erosion from the different geological facies exposed by numerous faults, including the two famous north-south faults known as the Sancerre and Thauvenay faults, which cross the vineyards from one side to the other.
These bring the Upper Jurassic (-154 to -140 Ma) layers to the west into contact with the Cretaceous (-96 to -65 Ma) and Eocene (-64 to -34 Ma) formations to the east.

The CHAVIGNOL cuvée is a blend of 30 of the estate's parcels located in the Chavignol area, at Les Bouffants, Les Vallées, La grande Côte and other sites.
The soil dates mainly from the Upper Oxfordian (-156 to -154 Ma) and consists of a layer of bedded limestone (hard limestone banks separated by clayey beds) estimated at 120 meters thick, and softer chalky limestone, known as 'Les calcaires de Bourges', some 50 meters thick.

WINEGROWING & WINEMAKING


The grapes are grown according to the Organic Farming specifications, without any herbicide, any insecticide, or fertilizer uses. The estate conversion in order to obtain Ecocert certification has been started in 2020.

The harvest is done manually in 12 kg boxes in order to avoid premature oxidation of the juices when the berries are crushed in the harvest hoods.
Once they arrive in the cellar, the grapes are completely destemmed then sorted manually before being put in vats for a skin maceration of 25 days. The marc cap which forms on the surface is regularly reincorporated into the must by pumping over once a day, a technique which consists in drawing off the juice from the tank bottom and reinjecting it at the tank top, which has the effect of drowning the marc's hat.

Alcoholic and malolactic fermentations take place with indigenous yeasts and bacteria in half 228-liter barrels and half in truncated-cone tanks.

At the end of the maceration phase, the must is pressed and aged in 228-liter barrels for a period of 8 to 12 months.
The wine is neither filtered nor fined before bottling.

The bottle is sealed with a DIAM10® cork stopper which guarantees the absence of TCA contamination of the wine (or cork taste)
