SOILS: Plot located east of Verzy where CAMPANIAN chalk, exceptionally rich in flint, outcrops, giving the wines great finesse and precision. On this terroir, Pinot Noir brings roundness, while Chardonnay ensures, through its finesse, fruitiness, and natural acidity, perfect aging for this blend of white and black grapes.

WINEMAKING: "L'ASCENDANT" is a Solera Champagne. This aging technique, used in Spain for the production of Sherry, is rare in Champagne. The system consists of different tiers of barrels stacked upon one another containing wines of different ages. The tier of barrels resting on the ground is called the solera, and the upper tiers above it are called criaderas.
The wine intended for bottling is drawn from the solera level, which is never completely emptied. The missing liquid is topped up with younger wine from the level above, or first criadera, which in turn is topped up with wine from the second criadera, and so on, up to the highest level which is topped up by the winemaker with the youngest wine. The number of criaderas or tiers can vary depending on the House.
