WINEMAKING: "L'ASCENDANT" is a Solera Champagne, using an Andalusian technique originally for Sherry. Different tiers of barrels are stacked upon one another; they contain wines of different ages. The wine intended for bottling is drawn from the tier of barrels resting on the ground, called the Solera, which is never completely emptied. The missing liquid is topped up with younger wine from the level above, or first criadera, which in turn is topped up with wine from the second criadera, and so on up to the highest level, which is topped up with the current year's wine.

Sommelier's Note

"I find the 2018 vintage slightly less tense than the 2017, richer and displaying great aromatic complexity. Notes of candied citrus are more pronounced, revealing hints of mandarin orange and quince paste, with a beautiful minerality on the palate."
