WINEMAKING: Produced via the "Saignée" method. Grapes are fully destemmed and undergo a short maceration (approx. 16 hours) to extract color and aromatics. Fermentation is carried out by indigenous yeasts, followed by malolactic fermentation. The wine matures on its lees for 6 months (split 80% in tanks and 20% in oak barrels). Bottled without fining or filtration.
