Terroir

PLANTING DATE: 1969, 1979, 1984, 1998 and 2005.

LOCATION: blend of plots located in Gros Mont in the village of Oiry, Les Bergeries in the village of Cramant, and Le Mont-Aigü & Les Caurés, both in the village of Chouilly.

EXPOSURE: N/A

SOILS: CAMPANIAN chalk, whose extreme porosity is a blessing for the vineyard: it provides a precious water reservoir for the vine's root system during summer heatwaves.

Viticulture & Winemaking

HARVEST: hand-picked.

YIELDS: N/A

SORTING: in the vineyard and in the cellar.

WINEMAKING: the estate uses the cuvée (must from the first 3 presses) for the Les Caurés plot and the taille (2 additional presses after the cuvée) for the other plots.
After pressing, alcoholic and malolactic fermentations are carried out in stainless steel tanks + aging on fine lees for 7 months.

RACKING DATE: May 2021.

AGING 'SUR LATTES': 22 months.

DOSAGE: 1.5 g/L.

CORK: natural cork.
