Terroir

PLANTING DATE: 1946 and 1970

LOCATION: Village of Chouilly:

  • 84% of the blend comes from the Le Mont-Aigu plot (planted in 1970)
  • 16% of the blend comes from the Les Caurés plot (planted in 1946)

EXPOSURE: N/A

SOILS: white chalk soil dating from the SENONIAN (Upper Cretaceous geological period), microporous, offering excellent water reserves for the vines (plot Le Mont-Aigu), and soil of more recent sandy-sandstone formation, dating from the PALEOCENE with chalk alterites and an abundance of limestone fossils (Les Caurés); the latter imparts tension and finesse to the wines.

Viticulture & Winemaking

HARVEST: hand-picked.

YIELDS: N/A

SORTING: in the vineyard and in the cellar.

WINEMAKING: slow pressing. Only the 'cuvée' (first press juice) is used. No malolactic fermentation. Aging on fine lees for 6 months in stainless steel tanks before bottling.

RACKING DATE: April 2018.

AGING "SUR LATTES": 68 months.

DOSAGE: 1.5 g/L.

CORK: natural cork.
