SOILS: layers of marl separated by limestone banks rich in marine fossils, dating from the KIMMERIDGIAN.

Viticulture & Winemaking

HARVEST: hand-picked in several passes, sometimes spread over 3 weeks.

YIELDS: N/A

SORTING: in the vineyard and in the cellar.

WINEMAKING: "Textures" is made in Qvevri (Georgian amphorae); 10% of the grapes are kept whole and poured into the Qvevris for partial skin maceration. The remaining 90% are pressed using a traditional Coquard vertical press, and the juice is poured into the Qvevris over the whole berries. The partial maceration lasts 8 months. Alcoholic and malolactic fermentations are carried out without additives. Racking and bottling for secondary fermentation.
