SOILS: well-draining clay-limestone and stony terroir, consisting of a thick layer of fluvial colluvium and alluvium. It is a heavy soil particularly well-suited to Pinot Noir vines.

SORTING: in the vineyard and the cellar.
WINEMAKING: total destemming, 15-day maceration in temperature-controlled vats with punching down + pumping over. Alcoholic fermentation with indigenous yeasts, then blending of press juice and free-run juice.
AGING: 12 months in oak barrels (including 15 to 30% new oak) + 2 months rest in stainless steel tanks for stabilization.
BOTTLING: without filtration or fining.
CORK: DIAM5®, specially designed to guarantee the absence of any contamination of the wine by the cork (known as "cork taint"), thanks to the use of the flower of the cork previously cleared of the molecule responsible for this aromatic defect.
