Terroir

VINE AGE: 40 years.

LOCATION: vineyard located in the commune of Chassagne-Montrachet.

EXPOSURE: East.

SOILS: LIAS marls (Upper Jurassic) and BATHONIAN hard limestone (Middle Jurassic), particularly suitable for Pinot Noir, whose production is increasingly significant in the area.

Viticulture & Winemaking

HARVEST: manual.

YIELD: N/A.

SORTING: in the vineyard and the cellar.

WINEMAKING: total destemming + 15-day maceration in temperature-controlled vats. Alcoholic fermentation with indigenous yeasts and a few punch-downs (pigeages) / pump-overs (remontages). Blending of press juice and free-run juice.

AGING: 11 months in oak barrels + 1 month in stainless steel tanks for stabilization.

BOTTLING: without filtration or fining.

CORK: DIAM5®, specially designed to guarantee the absence of any contamination of the wine by the cork (known as "cork taint"), thanks to the use of the flower of the cork previously cleared of the molecule responsible for this aromatic defect.
