SOILS: the terroir of Ad Fines is predominantly sandy-clay with a limestone subsoil, offering a rare balance between drainage and water retention. Composed of approximately 60-70% sand and 30% clay and silt. The stoniest plots are reserved for Serine and Cabernet Sauvignon.
.HARVEST: hand-picked, on Sept. 15, 2022 (Syrah) and Oct. 4, 2022 (Cabernet Sauvignon).
YIELDS: 20 to 30 hl/ha.
SORTING: carried out in the cellar with rare severity; no defective berries remain.
WINEMAKING: 100% destemmed for Cabernet Sauvignon and 70% for Syrah. Gravity-fed tank filling. Maceration for 23 days (Syrah) and 16 days (Cabernet Sauvignon) with pump-overs, rack and return, and punch-downs. Alcoholic fermentation with indigenous yeasts.
AGING: 12 months in Burgundy barrels (2 to 3 wines old).

"The 2022 vintage was marked by exceptional drought, resulting in highly concentrated grapes. Cabernet Sauvignon endows Gracchus with slightly mentholated notes and silky tannins, offering beautiful volume on the palate. The Syrah adds intense black fruit notes, which a 2 to 3-hour decanting will fully reveal. I recommend waiting until at least 2027/2030 to enjoy it."
