SOILS: 70% of the terroir consists of sand, with the remaining 30% being silt and clay; its dual properties of drainage and water retention make it a soil of choice for vines. The stoniest plots are reserved for Serine and Cabernet Sauvignon.

YIELDS: 20 to 30 hl/ha.
SORTING: carried out in the cellar with rare severity; no defective berries remain.
WINEMAKING: Cabernet Sauvignon and Syrah are fully destemmed, while for Serine, 30% of the bunches are kept. Cold pre-fermentation phase followed by maceration of 17 days for Serine, 19 days for Cabernet Sauvignon, and 26 days for Syrah. Fermentation with indigenous yeasts. Punch-downs and pump-overs.
AGING: 12 months in Burgundy barrels (2 to 3 wines old).
BOTTLING: after blending + 9 months of rest in the cellar.
CORK: natural cork.
