WINEMAKING: Matthieu DEISS has crafted a little curiosity by macerating the Pinot Noir pomace in the juice of the other white grape varieties that make up this cuvée.
Gewürztraminer, Pinot Blanc, and Pinot Gris are pressed immediately after harvest in concrete vats. The Pinot Noir pomace is then added for a maceration of about 2 to 3 weeks. Fermentations are spontaneous (no inoculation). No added sulfites during winemaking.
AGING: 18 months in stainless steel tanks with racking for clarification.
BOTTLING: without fining or filtration.
STOPPER: glass.
NOTE: RIEN NE BOUGE is a wine vinified without added sulfites and bottled without filtration or fining. It may therefore show a slight cloudiness in the glass; it must not be exposed to heat but stored in a cool cellar.
