WINEMAKING: the grape varieties for ARTISAN are the same as those for UN INSTANT SUR TERRE, though the winemaking method differs. While UN INSTANT SUR TERRE is vinified in Qvevri, ARTISAN is produced through carbonic maceration in tanks. Whole clusters are placed in stainless steel tanks saturated with CO2 for full carbonic maceration; the fermentation is intracellular rather than yeast-based. Once the intracellular fermentation is complete, the grapes are pressed and transferred to stainless steel tanks to finish the alcoholic (this time yeast-based) and malolactic fermentations.
AGING: on fine lees for 12 months in tanks.
BOTTLING: without fining, filtration, or added SO2.
STOPPER: glass.
RESIDUAL SUGAR: 0 g/l.
NOTE: ARTISAN is a skin-contact wine bottled without filtration. It may therefore show a slight cloudiness in the glass; it must not be exposed to heat but stored in a cool cellar.
