Terroir

VINE AGE: 30 years.

LOCATION: a blend of plots located in the communes of Sainte-Gemme-en-Sancerrois, Verdigny, and Sury-en-Vaux.

EXPOSURE: N/A.

GEOLOGY: so-called terres blanches (white lands) soils, consisting of a thick 80-meter layer of more or less clayey UPPER KIMMERIDGIAN marls, alternating with beds of soft or shelly limestone, as well as caillottes from the OXFORDIAN era, composed of hard, thin, and very stony limestone.

Viticulture & Winemaking

HARVEST: mechanical.

YIELD: 65 hl/ha.

SORTING: in the vineyard and at the winery.

WINEMAKING: gentle pressing, and fermentation in temperature-controlled stainless steel vats using half indigenous yeasts and half neutral oenological yeasts. Each plot is vinified separately, then blended after fermentation and before aging.

AGING: on fine lees for 6 to 18 months in vats.

BOTTLING: without filtration.

CLOSURE: Agglomerated cork.
