GEOLOGY: flint soil, locally known as "chailloux". This siliceous soil comes from recent alluvial and colluvial deposits; its content of fine elements (clay and silt) and more or less coarse elements (sand, gravel, stones) is variable. Dating from the CRETACEOUS and EOCENE periods, it rests on KIMMERIDGIAN or PORTLANDIAN layers; it is rich in silica and remarkable for the presence of flint.
HARVEST: mechanical.
YIELD: 50 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: gentle pressing. Fermentation in temperature-controlled stainless steel vats with indigenous yeasts.
