GEOLOGY: The vineyard sits on flint-rich soils, locally called "chailloux." These siliceous soils are derived from recent alluvial and colluvial formations, featuring a diverse mix of clays, silts, sands, and gravels. Dating back to the CRETACEOUS and EOCENE eras, the soil lies over KIMMERIDGIAN or PORTLANDIAN bedrock, standing out for its high silica content and distinctive flint fragments.
HARVEST: mechanical.
YIELD: 50 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: gentle pressing. Fermentation in temperature-controlled stainless steel vats with indigenous yeasts.
AGING: for 10 months in stainless steel vats.
