LOCATION: MÉMOIRE D'AUTOMNES is a dry white wine that has undergone a long oxidative aging process in oak barrels, similar to the Vin Jaune from Jura. Its production dates back to a distant era when winemakers only produced sweet wines. They used to set aside a portion of the fermenting must intended for sweet wine, allowing it to finish its fermentation so they could have a dry white table wine available year-round.

WINEMAKING:
VINIFICATION : A portion of the fermenting must originally intended for the production of white Banyuls is racked into oak barrels to complete both its alcoholic and malolactic fermentations. This yields a completely dry wine with absolutely no residual sugar. It is then aged in half-filled oak barrels where it undergoes aging under flor.
AGING: Aged under flor for 5 to 6 years in half-filled oak barrels.
BOTTLING: After racking, unfiltered and unfined.
CLOSURE: Natural cork.
