SOILS: The grapes come from the same plots used for the L'INCANDESCENT cuvée; they are located west of Verzy, where the emblematic chalky soil of Champagne disappears under a thick layer of clay and recent colluvium. Heavier in nature, this soil is well-suited to Pinot Noir. However, the vine still benefits from the subsoil of CAMPANIAN chalk characteristic of the region.

SORTING: In the cellar.

WINEMAKING: Grapes are pressed, then the juice is vatted for alcoholic fermentation (using a starter of indigenous yeasts), followed by malolactic fermentation. Aged on lees for 6 months in stainless steel tanks (75%) and oak barrels (25%). Bottled without fining or filtration.

"With nearly five years of aging "sur lattes", the nose offers intense brioche notes, leaning towards praline, while releasing bursts of lemon and green apple. The palate starts with a crisp attack; this cuvée is intended for lovers of rather lively Champagnes with beautiful complexity on the nose."
